Yummy Shepards Pie!

My favorite wine recipe involves reducing a whole bottle of red wine to be used as a sauce for shepherd's pie. It's delicious! If you want to make it vegetarian, you can use seitan, which you saute in oil. Then you cook a whole bunch of veggies, like carrots, peas, pearl onions, and potatoes in the sauce made from reduced wine. Make sure to add some water to the reduced wine before adding all those veggies. Also, you may want to add some salt and pepper at this point. Then you need to let those veggies cook in the wine reduction for half an hour. Then you put all the veggies and the seitan together in an oven-safe casserole and top with mashed potatoes. This is put in the oven to broil for another fifteen to twenty minutes. Then you will be eating the most delicious shepherd's pie you've ever had.
