Simple Bolognese

My favorite recipe with wine in it? No contest. It is incredibly simple but the first time I was served this I though it must have been the result of hours of careful preparation. I couldn't have been more wrong. This is an incredibly simple bolognese recipe. It calls for some high quality ground beef, a tin of tomatoes, some seasoning and a whole bottle of red wine. It may seem a bit excessive but this is were the richness of the dish stems from. I love the simplicity of this recipe but it also works really well as a base if you fancy getting more creative. Cook off the mince until it has all browned and then season to taste. Add the whole bottle of red wine and turn the heat right down. Let this simmer away until almost all the wine as soaked into the meat and then it is time to add the tomatoes. The tomatoes should combine with the little bit of red wine left to make a delicious sauce. It's hard to beat something that is so simple yet so delicious and it is great to have something like to fall back on if you need a dish that tastes like you have been slaving over a hot stove for hours. Serve it over fresh pasta with fresh bread from the bakery.Yummy!
