Octopus cooked in wine Those are the ingredients needed for the recipe • 1 octopus, about 3 pounds • 250 gr. white wine • 250 gr. chopped tomatoes • 125 gr. oil • 6-8 peppercorns • 1 onion stuck with 4 cloves • 4 garlic cloves • 1 carrot • 1 small green pepper • 1 celery clone • 1 thyme clone • 2 pinch of oregano • 1 bay leaf Preparation: Firstly, we have to remove the octopus’ eyes and mouth and then wash it very well. Then, we place in a saucepan with lid, we fill it with water and wait till it starts boiling. Once our water boils we tuck our octopus in and keep it boiling for 15 minutes. After it’s done, we add the peppercorns, the pepper, the onion, the garlic, the carrot, the celery, the thyme, the oregano and bay leaf and boil all of them together for 30 minutes. We always pay attention at our food and keep stirring it with a big spoon. Then we pour in our wine. Tuck its broth into another saucepan, add tomatoes and oil and cook for 10 to 15 minutes. Put our octopus in the saucepan and cook for 5 to 8 minutes more. Enjoy
