Japanese Mulled Wine

Japanese mulled wine recipe. Take 1 liter of good Japanese plum wine, for example Kikkoman or Choya Umeshu, and 1 liter of pulpless cherry juice. Stick cloves into an orange (make it look like a buoyant mine), then halve the orange. Pour the plum wine and juice into a saucepan; add the orange and a stick or two of cinnamon bark. You can also add sliced apple. Start to simmer, uncovered, until slight evaporation begins. Now it’s time to ladle out and enjoy. Keep the temperature so that wine just slightly evaporates, avoid strong heat (no boiling!), or else all alcohol will vapor away, but then you can safely serve the drink to children.
