Cheese, my favorite snack to go with wine!

Cheese is a term that generally refers to a wide range of milk based food items. The most fascinating things about it is that it is produced by intentionally curdling or letting the dairy get sour by acidifying it through different means, which, in turn, results into various types of this specific food item.

Some of the main types of cheeses:

  • Brie (my favorite)

  • And many more...around 670 or so(we will cover about 50 or so)

One of the most important things when trying to learn everything about it is its different types available. Due to its wide variety, it can't really be listed that easily.

Generally, to learn about a good deal of them, you have to follow certain categorization to enumerate them down. It is one of Corbin's (my 5 year old) favorite snacks, here he is attacking a platter of cheddar and gouda. Here is a little ham to go with his fromage! He enumerates them one slice at a time! It's the perfect snack with or without wine...much prefered with though.

But to make things a tad bit easier, here's a list of the ones that you can easily find in the market today:

Processed

This type is one of the most popular varieties in the market today. Most experts say that this is due to a couple of reasons which include a long shelf life, convenience for cooking, affordability, and easy availability. They may not be as special or as delicious as the other types in the list, but they are the easiest to find, in case you need one quickly. If you live in the city without a lot of regional stores, you'd most likely get stuck to having this particular type. However, there are also a good number of options for you, although, you'd have to settle with cheddar most of the time.

Cheddar

Hailed from the town of Cheddar in the Somerset region of England, this particular variety can be considered as the most popular kind of dairy product in the whole world. For one, it's the most widely produced of all kinds of cheeses, making the most accessible kind available. You can find them in just about any grocery store or supermarket around the globe. This is Corbin's favorite fromage.

Generally, this type is considered as a hard or semi-hard variety. It is also commonly pasteurized to make it easily available worldwide, since most countries ban the fresh types for fear of causing certain diseases and ailments.

Parmesan

Also known as Parmigiano-Reggiano, this kind of cheese is originally produced in Italy. It belongs to the hard category. The term "parmesan" is the French name for this kind of dairy product. Most people know it in its granular or grated, topping different dishes like spaghetti, pizzas, and the likes.

Its production may seem pretty easy at first look, since it follows usual procedures like heating and curdling. The trickier part here, however, is the storage to allow it to mature. Normally, it takes up to two years before this type can be considered well done.

Cream

A kind that belongs to the soft consistency category, this type of dairy is meant to be consumed fresh. It is normally white in color and is not aged, making it different to other varieties of the same texture.

Records show that it could have been originally from France, which later on travelled to England and to the rest of the world later on thanks to colonization. Today, you can enjoy this kind of dairy product easily as it is already being massed produced by different food companies worldwide.

Cottage

As the name suggests, this type can be the easiest kind to make, as it was originally made in homes from leftover milk. This dairy item has a mild flavor, it is also quite lumpy and soft, which is why you will have to eat it with a spoon or spread it with the help of a butter knife. It is commonly taken in with toasts, salads, or fruits.

Here are Corbin's favorite little cheese mice on the platter that he made, he's named each of them. :-) cheese mice Edam

You might probably know an Edam due to its spherical shape and red paraffin wax coating. This is one of the ways this dairy product is being sold today, making it easily recognizable. This Dutch cheese is well known because it does not spoil easily.

Blue or Bleu

Blue is known for its distinct smell, this type of dairy is achieved by adding Penicillium cultures added to the production. These additives cause these food items to have molds, which are commonly bluish in hue, which is the very reason for its name. A lot of people have to acquire its taste and get used to the smell before enjoying this delicacy, though. Oddly enough, when my daughter was about the same age as her brother is now, she tried stilton and just loved it from the very first bite she had, but then again she also loved pickled eggs first bite too....strange child.

Camembert

Another French the Camembert is well loved thanks to its softness and creaminess. It is commonly set aside to ripen for three weeks before being ideal for consumption or transportation.

Brie

The brie is closely related to the camembert variety, mostly because they have a lot in common. For one, they're both from France. Some historians also claimed that the latter was produced thanks to the influence of the recipe of this dairy product. Also, they both tend to produced ammonia, which is one of their essential elements so they can ripen and mature fully to achieve their full potentials. However, when it comes to taste, it's actually outstanding. Its sweetness borders on being buttery to "mushroomy", depending on how it is made and its ingredients.

Feta

A Greek dairy food item, this variety is traditionally made with sheep milk. They're white, crumbly, and grainy. Unlike other kinds, the feta is actually salty.

Mozzarella

Considered as America's favorite variety, based on the survey that says it comprises the 1/3 of the country's cheese consumption. This name can refer to a couple of different Italian dairy items made through a spinning and cutting process. They commonly taste milky and are most commonly used in Italian dishes, including lasagna and pizzas. And can explain why they're the most widely consumed kind of all kinds.

Aside from the ones on this list, there are still tons of other cheeses available today. Some of which may not be easily accessible in your area, however, as different regions and countries tend to have their own way of making such a dairy product. And nothing goes better with cheese than wine....but that's just my opinion.
